The Sivi Čaven Restaurant has been operating since 1895. A century ago, this was a stopping point for carters, and today it welcomes lovers of authentic homemade dishes. Ever since Mrs Amalija first served guests, the hospitality at the restaurant beneath Mount Čaven has remained unchanged. Guests are treated to authentic and traditional dishes made from locally sourced ingredients. Amidst all the delights, the atmosphere of a true Slovenian restaurant reigns supreme.
Chef Jasmina Črv Čermelj does not hide her joy at being able to create in a kitchen with such a prestigious tradition. With the same passion as her predecessors, she nurtures a heartfelt relationship with local suppliers and carefully crafts the menus. In her dishes, one can sense her love for authentic Vipava flavours and the inspiration she draws from childhood memories of the kitchen, where she first held a wooden spoon beside her mother.

Sour turnip fermented in pomace
Chef Jasmina Črv Čermelj enriched the Vipavska Cula with sour turnip, which is known only in the Vipava Valley and the Italian region of Friuli. The pink colour that the turnip acquires from fermenting in the pomace of red grapes, adds uniqueness to dishes and highlights its origin.
