After journeys through various culinary traditions, his heart led him to the Vipava Valley. Here, he seeks new inspirations and creates with the power of the Vipava bora wind.

Faladur Restaurant, which began its journey in Ajdovščina, has paved the way for a modern concept of presenting traditional dishes in the local area. Even with its name – faladur means the antechamber of a wine cellar – it conveys the Vipava passion for pairing homemade dishes with locally produced wines. It continues its concept of tasting bites based on traditional recipes at its current location in the old centre of Vipava.

Chef Timotej Cizej has travelled through many countries out of his passion for cooking, gathering culinary knowledge from various cultures. In Vipava’s Faladur, he recognized an opportunity for a new episode of exploring flavours and acquiring different skills. He claims to rely on the help of the bora wind, but in reality, he has brought some fresh air to the Vipava environment and new ideas to Faladur.
